The name of the hotel comes from “Sbib”, a term which the ancient Arabs used to describe the variety of grape which is now known as zibibbo. In fact, the wine obtained from these grapes is one of the typical products of the area, together with the gastronomic specialities of Pantelleria cuisine such as the delicate ‘Ravioli amari’ stuffed with ricotta cheese and mint leaves and the fragrant ‘Pesto pantesco’, based on raw tomato, olive oil, garlic, basil and chili-pepper; Sciakisciuka – a hot vegetable caponata and Cuccurummà with flavoursome local courgettes; the traditional Easter cake, Cannateddro; Mustazzola – a simple pastry dough filled with semolina from durum wheat, honey or cooked wine, cinnamon, orange peel and other spices.
